Bread, pastries and coffee, made here every morning.

Bread

Three to five ingredients at most.

We work with the absolute best mills we could find in France and in Arizona.

Pastries

Laminated by hand, in small batches.

Three days from mix to counter, most of it spent fermenting.

Coffee

Roasted a few miles away.

Medium roast by Caffe Luxxe — roasted only a few miles away.

Dough resting overnight
everything starts 4 days ago

Four days is all is takes

Dough is mixed, folded and rested overnight. Lamination happens the day after. Then it's rolling day and another night of rest until the big day! By the time the doors open the croissants have been on a long 4 days journey.
